Yummy recipes and beautiful sunset

I'm not getting time to blog at the moment, so I am quickly adding a couple of recipes I cooked up yesterday for Hubby to take to work and for the Garden Club meeting...


 Apricot Slice
2 cups SR Flour
1/2 cup milk
125gms of butter
1 cup of raw sugar
200gms dried apricots
1 cup coconut

Soak apricots in boiling water for 15minutes.  Melt butter, add milk to butter, add strained fruit, sugar, coconut and then flour. Mix well. Bake for 45 minutes in moderate oven.

Mary's Pizza Slice
1 packet of Jatz biscuits, crushed
250gms ham, chopped
250gms grated cheese
1/2 small capsicum, chopped
1 medium onion, chopped
pinch Paprika
2 eggs
1/4 cup milk
1 tspn dry mustard
salt and pepper

Cook ham, capsicum, onion in a little butter with a pinch of paprika. Stir into biscuit crumbs with salt, pepper, mustard and 3/4 of the grated cheese.  Beat eggs lightly. Stir in milk, then add to crumb mixture.  Stir well.  Turn into slice tin, put remaining cheese on top. Bake in moderate oven (180C) for 15-20minutes until lightly brown. Cut into fingers. Serve hot or cold...

  1. Oh - my Mum used to make the pizza slice - except I think it had cabana sausage in it!
