One-cup Fruit Slice



One-cup Fruit Slice


(taken from The Secret of Healthy Children)




*This is one you can throw together and have in the oven in under 10 minutes. Any other combination of dried fruit can be used in place of the dried apricots and sultanas, as long as it amounts to 2 cups.




1 cup wholemeal self-raising flour




1 cup coconut




1/2 cup brown sugar




1 cup chopped dried apricots




1 cup sultanas




1 cup reduced-fat milk




Grease a 20cm x 30cm slab tin.




Mix all the ingredients together evenly. Press into the tin.




Bake at 180C for 25-30 minutes.




CUT INTO 20 SQUARES




(I used 2 cups of fruit medley in this one and there is no butter/margarine added so it is good for the waistline)

  2. I was disappointed with craisins, I think they are saturated in normal sugar, rather than being natural, if you know what I mean. However, I could be wrong. Maybe they are soaked in strong syrup or something.

  3. I accidently bought apricots the other day I think instead of dried apples.

    Despite my earlier comment, kids need something like this, otherwise they would be into other stuff.

    So similar to the Family Circle 5 cup cake, it is a race between you and the oven heating up.

    I just popped in a few minutes ago saw this and went fantastic afternoon tea that can be cooked and ready for this afternoon.

    it is in the oven now.

    My new job is FANTASTIC trouble is I am dividing my time between my old job and the new one and that is draining and yuk.
